How to Cook Rhubarb - Cook Rhubarb Recipe
How to Cook Rhubarb
Ingredients
1kg or 2.2 lb rhubarb
300g or 1 1/3 cups fine sugar
Water
A small amount of salt (optional)
How to make it
Steps
1 Wash the stalks and cut off the ends at the base and near the leaves.
2 Cut rhubarb stalks into small pieces.
The size is up to you, but a good size is around 2–3 centimeter (0.8–1.2 in) or 1"-1.5".
3 Place the rhubarb pieces and sugar into a heavy-based saucepan.
Pour in a little water to cover the rhubarb.
4 Cover the saucepan.
Cook over a low heat for approximately 10 minutes. Stir the contents occasionally to prevent sticking. You will know the rhubarb is done when it becomes mushy and rhubarb strings are apparent throughout the mixture.
5 Remove from the heat and allow to cool.
6 Strain off excess liquid if using in a recipe.
This liquid can be used to make a syrup if desired. Alternatively, if you are serving the rhubarb by itself, leave the liquid as part of the dessert.
